Stuffed Peppers

MONDAY, APRIL 4/11 Today has been a good day, I spent most of the day with our grandchildren. Then in the pm I went to my friend D to watch Dancing With The Stars, we quite enjoy that. So I am a bit late doing my entry for this week. I have been loosing weight between 90-98 lbs, but this past week I hit the 100 lb lost, but I am back up a bit. I hold a lot of fluid, depending on what I drink and that affects my weight. Tomorrow is another day. Here is My Recipe for Stuffed Peppers that my daughter did for me and it was delicious, so now this is what I use. STUFFED PEPPERS FOR 4 or 5 SERVINGS -people who had the gastric bypass surgery, this would do you for several meals. -About 2lbs of ground chicken, fry with a small onion. -4-6 peppers, any colour you like. Cut the top off of the pper but save it. Scoop out the seeds and clean it out. -Meanwhile, the chicken has been frying on low, keep an eye on this so that it will not burn. -Cook minute rice, I am using brown rice now, for about 4 people. When this is done, drain it and add to the chicken and onions. -Then add to this mixture, a can of chopped tomatoes, stir it in gently. -Then by spoonfuls fill up the peppers, top witha little grated cheese of your choice, then put the top of the pepper on it. -Arrange in a baking pan, cover and bake for about 45 min. at 350 degrees. -If you have left over cooked chicken, rice and tomotoe mix, arrange around the stuffed peppers. You may want to add a little bit of water to this pan, to keep it from overcooking or burning. (The only difference that I used to do, is to add the tomatoes after I had arranged the peppers in the pan. I would pour the tomatoes over them and any extra mixture that I had put in the bottom of the pan. Both are good, but adding the tomatoes to the frying pan makes a little different taste and texture, I am not sure why) I only eat a half of a pepper and a little of the stuffing. Recipe for Protein Shake and a Low Fat Trifle Dessert

Today is Monday, March 28, 2011 I am going to try and add a recipe or two each week for those who have had gastric by-pass surgery or anyone looking for low fat and low sugar recipes. If you have any good recipes, low fat and low in sugar, let me know. It would be good to share. I have not liked too many of my protein shakes however, my dietician gave me this one and it is pretty good: PROTEIN SHAKE 4 cubes of frozen low fat milk (I pour milk in one of my ice cube trays, when frozen I pop it out and reserve them in a baggie for my shakes.) 3 tablespoons of yogurt -any flavour you like 1 tablespoon of cottage cheese (I have not used this in my shakes) few frozen fruit berries or banana chunks (both are good-if using bananas, I use really ripe ones-not good for eating but good for this) a little dash of vanilla extract 1 scoop of your protein powder-blend of this in your blender LOW FAT TRIFLE (You can put this in a glass bowl or trifle bowl or in individual glass pudding bowls-you do this because it look pretty) INGREDIENTS: -Angel Food Cake or a low fat vanilla cake -strawberry or cherry- sugar-free jello -2-3 cups of cut up fruit (strawberries, bananas, blueberries, raspberries, etc.-if using bananas or apples, cut them up and pour lemon juice on top, let them set in it for 5 min. then drain the juice off, this will prevent them from turning brown) -low fat/sugar free pudding mix (vanilla or butterscotch-(I have not done this, but you could add a bit of your vanilla protein powder to this, once it is mixed or to the cool whip) -low fat/low sugar or no sugar cool whip PROCEDURE: -angel food cake or low fat vanilla cake, cut into cubes, put in the bowl -mix up your no sugar jello mix - I used strawberry or cherry -pour half over the cake -spoon half of fruit on top -spoon half of pudding on top of fruit -cover with cool whip -then repeat all of this one more time -top with a strawberry or any fruit you wish (IF DOING THIS IN INDIVIDUAL BOWLS, ADD A LITTLE FRUIT, PUDDING AND COOL WHIP IN EACH IN EACH BOWL TO MAKE IT GO ALL AROUND) This is delicious. I took a picture of this, but I have not got it off of my camera yet, when I do, I will add it so you can see it. Talk with you folk next Monday with knew recipes that I will try. A NEW DAY

March 20, 2011 I have not witten in my blog for a few years, as I acutally had forgotten about this and then when I remembered, I could not remember the name of my blog, how silly!! A good friend, LM, does blogging and I enjoy hes very much, so I thought I would try this again. . In Feb. of 2010, I woke up one morning and could not walk, I was in so much pain and could not straighthen out. My husband, J, called the ambulance and I went to the hospital. Aftger many tests, I had a pinched nerve in my back and running down my leg, arthritis, spinal stenosis, pindched nerve at the top of my spine. I also had already decided to have gastric by-pass and my surgery was booked for May 3/10 in Toronto. Since then, I have lost almost 100 lbs, not quite, I fluctuate between 90-98 lbs. I just cannot get to that 100 lbs mark, but I will. I have had several injestions in my back for a pain block and finally I think it is starting to work. I can walk straight, without my cane or walker most times and I am doing swimming. Hopefully, this spring, I will walk more and more outside. I friend asked me if I was sorry that I had it done, and I said, "No, why would you ask that?", "Well, she said, you cannot not eat very much." I said, "Exactly that is the point, and I am now eating most things." Sometimes I have some issues, but not too many and sometimes I eat a little too much, and then I am sick. The best news is, I am off of all my insulin injections and pills. I was on 255 units of insulin a day and my sugars were still vwery high, I was insulin resistence and my future was not good. My doctor now says my life span has drastically increased. Granted all our lives are in God's hands, but now I feel I am in bettr control and I feel good about my future and my future with my family and my friends. I will bew trying to blog more and more. If anyone has had gastric by-pass and would like to talk with me about this, please do so, IK would love to chat with you more and more. We can encourage one another to keep on keeping on. BE ENCOURAGED

march 22, 2008 - HAPPY EASTER TO ALL - HE IS RISEN, HE IS RISEN INDEED - I went to church yesterday and had a most blessed time with the Lord. Pastor spoke from Genesis 22: 1-14 of the account of Abraham and Isaac and tied it into the death of Jesus on the cross. Three things he mention, the OBLIGATION, the OBEDIENCE and the ORDER. What faith Abraham had to obey this obligation and order. However, in verse 5, he told his servants to wait and he and the boy would return there after they went over to worship. So Abraham knew they were BOTH coming back there. That is the kind of faith that we need, to know that when God says something, it will always be true, he will fulfill everyone he says he will do. I need this so much, as I struggle with things in my life, too numerous to mention, but God knows and I can dailky give him those struggles and he will take care of them. He reminds us to "Cast all our cares on the Lord, and he will sustain you, he will never let the righteous fall." Psalm 55:22 Talk with you soon, Wendy

LESSONS LEARNED FROM GOOD FRIDAY

Friday, March 21, 2008- I went to church this morning, not sure I wanted to go, but decided to go. Pastor talked from Genesis 22:1-14 when Abraham was asked by God to sacrifice his only son. Pastor went through this passages and made comparisons to when Christ died on the cross for us. I never seen this before it was amazing. First of all, there was an OBLIGATION to the Lord. The Lord ask Abraham to do this and being a man of God was going to do what God had asked him to do. He had tremendous faith. Second, it was OBEDIENCE to the Lord, Abraham did exactly what was asked of him, and so did his servants and so did Isaac. In verse 5, Abraham asked his servants to stay behind and they would return (he and Isaac. Lastly the ORDER, was given to sacrifice his son, and as he raised his knife to sacrific Isaac, the angle called out to him and later we seen that a sacrifice had already been provided. These are so alike what God has done for us through his son, Jesus. l. It was asked of Abraham by God to sacrifice his only son and he did, like Abraham did without question. 2. Christ was obedient to the coss. He knew he had to do this, but did not want to do it, us, so the sacrifice was given and through him, we can go to heaven. Also Isaac did not resist his father, he was being obedient even to the point of death, he could have fought his father, but did not. A Sacrifice had to be given. Jesus was obedient right to the cross, he was our sacrifice, but with Isaac, he was not the sacrificed, God had provided a sacrifice. Thirdly, all things were done in ORDER. Abraham had a knife, the place was picked and the sacrific was ready, but God said do not harm the lad, here is a sacrifice , but with Christ, God had an order, and it was for Jesus to be the sacrifice, he died to justify the ungodly, so that thru him, we can go to heaven. wendy
