Stuffed Peppers
MONDAY, APRIL 4/11 Today has been a good day, I spent most of the day with our grandchildren. Then in the pm I went to my friend D to watch Dancing With The Stars, we quite enjoy that. So I am a bit late doing my entry for this week. I have been loosing weight between 90-98 lbs, but this past week I hit the 100 lb lost, but I am back up a bit. I hold a lot of fluid, depending on what I drink and that affects my weight. Tomorrow is another day. Here is My Recipe for Stuffed Peppers that my daughter did for me and it was delicious, so now this is what I use. STUFFED PEPPERS FOR 4 or 5 SERVINGS -people who had the gastric bypass surgery, this would do you for several meals. -About 2lbs of ground chicken, fry with a small onion. -4-6 peppers, any colour you like. Cut the top off of the pper but save it. Scoop out the seeds and clean it out. -Meanwhile, the chicken has been frying on low, keep an eye on this so that it will not burn. -Cook minute rice, I am using brown rice now, for about 4 people. When this is done, drain it and add to the chicken and onions. -Then add to this mixture, a can of chopped tomatoes, stir it in gently. -Then by spoonfuls fill up the peppers, top witha little grated cheese of your choice, then put the top of the pepper on it. -Arrange in a baking pan, cover and bake for about 45 min. at 350 degrees. -If you have left over cooked chicken, rice and tomotoe mix, arrange around the stuffed peppers. You may want to add a little bit of water to this pan, to keep it from overcooking or burning. (The only difference that I used to do, is to add the tomatoes after I had arranged the peppers in the pan. I would pour the tomatoes over them and any extra mixture that I had put in the bottom of the pan. Both are good, but adding the tomatoes to the frying pan makes a little different taste and texture, I am not sure why) I only eat a half of a pepper and a little of the stuffing.
